Method

Preparation of Ingredients

  1. 1

    Marinate the Steak

In a bowl, combine olive oil, salt, black pepper, garlic powder, and cumin. Add the flank steak and coat it well with the marinade. Let it marinate for at least 30 minutes.

  2. 2

    Slice Vegetables

While the steak is marinating, slice the green bell pepper, onion, and mushrooms into thin strips.

Cooking

  1. 3

    Grill the Steak

Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and grill for about 5-7 minutes per side, or until cooked to your desired level of doneness. Remove from heat and let it rest for about 5 minutes before slicing.

  2. 4

    Sauté the Vegetables

In a skillet, add a bit of olive oil and sauté the sliced green bell pepper, onion, and mushrooms over medium heat until tender, about 5-6 minutes. Season with salt and pepper.

  3. 5

    Assemble the Quesadillas

On one half of each tortilla, layer the sliced grilled steak, sautéed vegetables, and provolone cheese. Fold the tortillas over to create a half-moon shape.

  4. 6

    Cook the Quesadillas

In the same skillet, add a bit more olive oil if needed. Cook each quesadilla over medium heat for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.

Serving

  1. 7

    Serve the Quesadillas

Cut each quesadilla into wedges and serve warm with sour cream and salsa on the side.
