Preparation

  1. 1

    Prepare Mashed Potatoes

Cook the potatoes in a pot of salted boiling water until tender, about 15 minutes. Drain and mash with butter, cream, salt, and pepper to taste.

  2. 2

    Toast the Bread

In a skillet or toaster, toast the Texas toast slices until golden brown on both sides.

  3. 3

    Heat the Meat

If using refrigerated roast beef or turkey, warm it in the microwave or in a skillet until heated through.

  4. 4

    Prepare Gravy

If using store-bought gravy, heat it in a saucepan over medium heat until simmering. If making from scratch, follow your favorite recipe.

Assembly

  1. 5

    Layer the Ingredients

On each slice of Texas toast, place a generous scoop of mashed potatoes.

  2. 6

    Add Meat

Place the warmed roast beef or turkey on top of the mashed potatoes.

  3. 7

    Pour Gravy

Smother the entire open-faced sandwich with hot gravy.

  4. 8

    Garnish

Sprinkle with chopped parsley and sliced green onions if desired.
