For Battered Fish Fillets

Prepare the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well to combine all dry ingredients.

Add Water
Gradually whisk in cold water until the batter is smooth and has a consistency that will cling to the fish.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each swai fillet into the batter, ensuring both sides are coated evenly.

Fry the Fish
Carefully place the battered fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy.

Drain and Serve
Remove the fried fillets and place them on a paper towel-lined plate to drain excess oil. Serve immediately.

Marinate the Fish
In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and black pepper. Brush this marinade onto both sides of the swai fillets and let them marinate for at least 15 minutes.

Preheat your grill to medium heat (about 350°F or 175°C).

Remove the fillets from the grill, sprinkle with fresh parsley, and serve immediately with your choice of sides.
