Prepare the Chicken
In a bowl, mix olive oil, cumin, paprika, garlic powder, salt, and black pepper. Add the chicken breasts and coat them evenly with the mixture. Allow to marinate for at least 30 minutes.

Grill the Chicken
Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F or 75°C). Remove from heat and let rest for 5 minutes, then slice into strips.

Assemble the Quesadilla
Place a tortilla on a flat surface. On one half of the tortilla, layer shredded cheddar cheese and some sliced grilled chicken. Fold the other half of the tortilla over the filling.

Cook the Quesadilla
Heat a non-stick skillet over medium heat. Place the assembled quesadilla in the skillet and cook for about 3-4 minutes or until the bottom is golden brown. Flip and cook the other side for another 3-4 minutes until the cheese is melted.

Repeat the assembly and cooking steps for the remaining tortillas and filling.
