Prepare the Protein

    Grill the Steak or Chicken

    Season the steak or chicken with salt and black pepper. Preheat a grill or grill pan over medium-high heat. Grill the protein for about 6-8 minutes on each side, or until fully cooked to your desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

Sauté the Vegetables

    Cook the Onions, Peppers, and Mushrooms

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook for about 3 minutes until they start to soften. Then add the green bell peppers and mushrooms. Sauté for an additional 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized. Season with a pinch of salt and black pepper.

Assemble the Sandwich

    Build the Hoagie

    On a clean surface, slice the hoagie rolls lengthwise without cutting all the way through. Layer the sliced grilled steak or chicken on the bottom half of each roll. Spoon the sautéed vegetables evenly on top of the meat. Place 2 slices of provolone cheese on each sandwich. If desired, you can place them under a broiler for 2-3 minutes to melt the cheese.

    Close the hoagie rolls and serve immediately with your choice of side, such as fries or a salad.
