Prepare the Protein

Sauté the Vegetables

Cook the Onions, Peppers, and Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook for about 3 minutes until they start to soften. Then add the green bell peppers and mushrooms. Sauté for an additional 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized. Season with a pinch of salt and black pepper.
Assemble the Sandwich

Build the Hoagie
On a clean surface, slice the hoagie rolls lengthwise without cutting all the way through. Layer the sliced grilled steak or chicken on the bottom half of each roll. Spoon the sautéed vegetables evenly on top of the meat. Place 2 slices of provolone cheese on each sandwich. If desired, you can place them under a broiler for 2-3 minutes to melt the cheese.
