Main Ingredients

Method

Preparation

  1. 1

    Prepare the Scallops

Rinse the scallops under cold water and pat them dry with paper towels. This will help them sear properly.

  2. 2

    Season the Scallops

In a small bowl, mix together salt and black pepper. Sprinkle the seasoning generously over both sides of the scallops.

  3. 3

    Mince the Garlic

Peel and mince the garlic cloves finely.

Cooking

  1. 4

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until it shimmers.

  2. 5

    Sear the Scallops

Carefully place the scallops in the skillet, leaving space between each one. Sear for about 2-3 minutes without moving them until they develop a golden brown crust.

  3. 6

    Flip the Scallops

Using tongs, flip the scallops over and add the butter and minced garlic to the skillet. Cook for another 2-3 minutes, spooning the melted butter over the scallops as they cook.

  4. 7

    Add Thyme and Lemon Juice

Once the scallops are opaque and firm to the touch, add the fresh thyme leaves and lemon juice to the skillet. Stir briefly to combine.

  5. 8

    Remove from Heat

Transfer the scallops to a plate and drizzle some of the pan sauce over them before serving.
