Method
Preparing the Salmon
- 1
Season the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.
- 2
Heat the Oil
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- 3
Sear the Salmon
Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes without moving them, until the skin is crispy and golden brown.
- 4
Flip and Finish Cooking
Carefully flip the salmon fillets and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork.
Making the Lemon Butter Sauce
- 5
Melt the Butter
In a small saucepan, melt the unsalted butter over medium heat.
- 6
Add Garlic and Lemon
Once the butter is melted, add the minced garlic, lemon juice, and lemon zest. Cook for 1-2 minutes until fragrant.
- 7
Stir in Parsley
Remove from heat and stir in the chopped parsley. Set aside.
Cooking the Seasonal Vegetables
- 8
Prepare the Vegetables
In a separate bowl, toss the asparagus and cherry tomatoes with 1 tablespoon olive oil, salt, and black pepper.
- 9
Sauté the Vegetables
In another skillet, sauté the prepared vegetables over medium heat for about 5-7 minutes until they are tender but still crisp.
