Preheat your oven to 425°F (220°C).

Prepare the Chicken
Remove the chicken from the packaging and pat dry with paper towels. Rub the entire chicken with olive oil, ensuring it’s evenly coated.

Sprinkle salt and black pepper generously on the chicken, including inside the cavity. Place crushed garlic cloves and rosemary sprigs inside the cavity. Squeeze the juice of the lemon over the chicken, then place the lemon halves inside the cavity as well.

In a large bowl, toss the chopped vegetables with a drizzle of olive oil, salt, and pepper to taste.

Roast the Chicken
In a large oven-safe skillet, place the chicken breast side up. Surround the chicken with the seasoned vegetables.

Transfer the skillet to the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear.
