Preparing the Oysters

Shucking the Oysters
Begin by ensuring all oysters are clean. Place them on a flat surface and use an oyster knife to carefully pry open the shells, starting at the hinge. Remove the top shell and discard it.

Plating the Oysters
Arrange the shucked oysters on a platter filled with crushed ice to keep them chilled until serving.
Making the Mignonette Sauce

Combining Ingredients
In a small bowl, mix the finely chopped shallots, red wine vinegar, and freshly ground black pepper together.

Chill the Sauce
Let the mignonette sauce sit for at least 15 minutes to allow the flavors to meld before serving.
Making the Cocktail Sauce

Mixing Ingredients
In another bowl, combine ketchup, horseradish, lemon juice, and hot sauce (if using). Stir until well blended.
