Method
Crust Preparation
- 1
Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until well combined.
- 2
Form the Crust
Press the mixture into the bottom and up the sides of a 9-inch pie dish. Make sure to pack it tightly for a sturdy crust.
- 3
Bake the Crust
Bake in the preheated oven for 8-10 minutes, or until lightly golden. Remove and allow to cool while preparing the filling.
Filling Preparation
- 4
Mix the Filling
In a large mixing bowl, whisk together the key lime juice, sweetened condensed milk, and egg yolks until smooth and well combined.
- 5
Pour the Filling
Pour the mixture into the cooled graham cracker crust, spreading it evenly.
- 6
Bake the Filling
Bake in the oven at 350°F (175°C) for about 15-20 minutes, or until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature.
Topping Preparation
- 7
Whip the Cream
In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form.
- 8
Top the Pie
Spread or pipe the whipped cream over the cooled key lime filling. Decorate with fresh berries on top.
- 9
Chill and Serve
Refrigerate the pie for at least 2 hours before serving to allow the flavors to meld and the filling to firm up.
