Method

For the Grits

  1. 1

    Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of corn grits and stir. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes until thickened.

  2. 2

    Add Milk and Season

Once the grits are cooked, stir in 1 cup of milk, 2 tablespoons of butter, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 cup of shredded cheddar cheese. Mix until creamy and smooth, then keep warm.

For the Grilled Shrimp

  1. 3

    Marinate the Shrimp

In a bowl, combine 1 pound of peeled and deveined shrimp with 2 tablespoons of olive oil, 2 tablespoons of minced garlic, 1 teaspoon of paprika, 1 teaspoon of cayenne pepper, 1 teaspoon of salt, and 2 tablespoons of lemon juice. Mix well and let marinate for 15-20 minutes.

  2. 4

    Grill the Shrimp

Preheat a grill or grill pan over medium-high heat. Grill the marinated shrimp for 2-3 minutes on each side until they are pink and opaque. Remove from heat.

For the Spicy Sauce

  1. 5

    Prepare the Spicy Sauce

In a small saucepan, melt 2 tablespoons of butter over medium heat. Add 3 tablespoons of hot sauce, 1 tablespoon of honey, and 1 tablespoon of lemon juice. Stir until combined and heated through.
