Chocolate Ganache

Bruleed Banana

Banana Chip Ice Cream

Method

Chocolate Ganache

  1. 1

    Prepare the Ganache

Chop the dark chocolate into small pieces and place them in a heatproof bowl. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for about 2 minutes. Add the vanilla extract, then stir until smooth and glossy. Allow the ganache to cool slightly before using.

Bruleed Banana

  1. 2

    Brulee the Bananas

Peel the bananas and slice them in half lengthwise. In a skillet, melt the butter over medium heat, then add the banana halves cut side down. Cook for 2-3 minutes until golden brown. Sprinkle granulated sugar over the cut side of the bananas and use a kitchen torch to carefully brulee the sugar until caramelized. Set aside.

Banana Chip Ice Cream

  1. 3

    Make the Ice Cream

In a blender, combine the ripe bananas, coconut milk, maple syrup, and vanilla extract. Blend until smooth. Stir in the chocolate chips. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Once churned, transfer to a container and freeze for at least 4 hours until set.
