Calamari Preparation

    Clean the Squid

    Rinse the fresh calamari under cold water. Remove the head and innards, then slice the body into rings about 1/2 inch thick.

    Set Up Breading Station

    In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. In another bowl, beat the eggs.

    Bread the Calamari

    Dip each calamari ring first into the egg, then coat thoroughly with the flour mixture. Shake off any excess flour.

    Heat Oil

    In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Fry the Calamari

    Carefully add the breaded calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to burn it.

    Add Tomatoes

    Pour in the canned crushed tomatoes and stir to combine.

    Season the Sauce

    Add dried oregano, dried basil, salt, black pepper, sugar, and red pepper flakes to the sauce. Stir well.

    Simmer

    Reduce heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.
