Preparation of Oysters

Shuck the Oysters
Carefully shuck the oysters and place them on a baking sheet. Ensure that they remain in their shells and discard any that are not fully closed.

Preheat the Broiler
Preheat your oven’s broiler to high. Ensure the oven rack is placed about 6 inches from the heat source.
Making Harissa Lime Butter

Mix Ingredients
In a small bowl, combine the unsalted butter, harissa, lime juice, and Pernod (if using). Mix until well blended.

Cooking the Spinach Mixture

Add Spinach
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and black pepper.

Combine with Cheese
Remove from heat and stir in the shredded Gruyère cheese until melted and well combined.
Assembly and Broiling

Broil the Oysters
Place the baking sheet with the prepared oysters under the broiler. Broil for about 5-7 minutes, or until the cheese is bubbly and golden brown.

Carefully remove the oysters from the oven and let cool for a minute. Serve immediately, garnished with lime wedges if desired.
