Preparation

    Prepare the Barrel

    If using wood chips, soak them in water for about 30 minutes. This will prevent them from burning and will impart a nice flavor to the Manhattan.

    Fill the Barrel

    In a clean oak barrel, combine the rye whiskey, sweet vermouth, Angostura bitters, and orange bitters. If using, add the soaked wood chips. Seal the barrel and allow to age.

    Aging Process

    Let the mixture age in the barrel for at least 2 weeks, but preferably for 4-6 weeks to allow the flavors to mature and develop.

    Prepare the Glass

    After the aging process is complete, prepare a chilled cocktail glass by placing it in the freezer or filling it with ice water to chill.

    Strain the Cocktail

    Once the glass is chilled, strain the barrel-aged Manhattan mixture into the glass, leaving out any wood chips or sediment.

    Garnish

    Garnish the drink with a maraschino cherry on top.
