Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for baking the salmon.

Prepare the Cheese Mixture
In a mixing bowl, combine the shredded Tillamook cheddar cheese, pimento cheese spread, diced Andouille sausage, and chopped chives. Mix until well combined.

Prepare the Salmon
Pat the salmon fillets dry with a paper towel. Season both sides with salt and black pepper.

Wrap in Bacon
Take the slices of bacon and wrap each salmon fillet tightly with two slices, ensuring that the entire fillet is covered.

Sear the Salmon
In a large, oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the bacon-wrapped salmon fillets, cooking for about 3-4 minutes on each side until the bacon is crispy.

Add Cheese Mixture
Once the salmon is seared, remove the skillet from heat. Spoon the cheese mixture evenly over the top of each salmon fillet.

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked to your desired doneness and the cheese is melted and bubbly.
