Marinade & Lamb

    Prepare Marinade

    In a large bowl whisk together yogurt, ginger-garlic paste, red chili powder, turmeric, ground coriander, garam masala, salt, lime juice and 3 tablespoons oil until smooth.

    Marinate Lamb

    Add the lamb pieces to the marinade and rub thoroughly so each piece is coated. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor penetration.

Rice & Soak

    Rinse and Soak Rice

    Rinse basmati rice under cold water until the water runs clear to remove surface starch. Place rice in a bowl, cover with 1 litre water and soak for 30 minutes. Drain thoroughly before parboiling.

    Parboil Rice

    Bring a large pot of water to a rolling boil. Add 1 tsp salt and the drained rice. Boil uncovered for 5–6 minutes until grains are about 70% cooked (still slightly firm in center). Drain the rice in a fine-mesh sieve and set aside.

Spices & Tempering

    Fry Whole Spices

    In a heavy-bottomed large pot (dutch oven or biryani handi) heat 3 tablespoons ghee + 1 tablespoon oil over medium heat. Add bay leaves, cardamom pods, cloves, peppercorns, cinnamon stick, star anise and cumin seeds. Sizzle for 30–45 seconds until fragrant but not burned.

Onions, Aromatics & Herbs

    Caramelize Onions

    Add the thinly sliced onions to the spiced ghee and cook over medium-low heat, stirring frequently, until deep golden brown and caramelized (about 20–25 minutes). Remove half of the caramelized onions and set aside for garnish.

    Cook Tomatoes & Chilies

    To the remaining onions in the pot add the chopped tomatoes and slit green chilies. Cook for 6–8 minutes until tomatoes soften and oil begins to separate.

    Brown the Marinated Lamb

    Add the marinated lamb pieces (and any accumulated marinade) to the pot. Increase heat to medium-high and sear the lamb for 6–8 minutes, stirring occasionally, until surfaces brown. This develops flavor before simmering.

    Simmer Lamb

    Pour 500 ml hot water or lamb stock into the pot to deglaze, scraping any browned bits. Bring to a gentle boil, then reduce heat to low, cover and simmer for 30–35 minutes until lamb is tender but not completely falling apart (cooking time may vary depending on cut). Check seasoning and adjust salt.

    Add Fresh Herbs

    Once lamb is tender, stir in half of the chopped cilantro and half of the chopped mint. Remove from heat and level the lamb mixture in the pot for layering.

Layering & Final Cook

    Soak Saffron

    While the lamb simmers, warm 3 tablespoons milk and add saffron threads to steep, releasing color and aroma. Add rose water or kewra if using and set aside.

    Layer Rice Over Lamb

    Evenly spread the drained parboiled rice over the lamb in the pot to form a uniform layer. Sprinkle the reserved caramelized onions, remaining chopped cilantro and mint over the rice. Drizzle the saffron-infused milk evenly over the rice. If desired, sprinkle an additional 1 teaspoon garam masala and a few drops of rose/kewra water for aroma.

    Dum (Steam) Cook

    Seal the pot to trap steam: cover with a tight-fitting lid, or place a sheet of aluminum foil between the pot and lid and then close. Put the sealed pot over a low flame (use a heat diffuser or tawa/griddle under the pot to prevent direct high heat). Cook on very low heat for 25–30 minutes to allow flavors to marry and rice to finish cooking through 'dum' method. Alternatively finish in a 180°C (350°F) oven for 20–25 minutes.

    Rest and Fluff

    Turn off heat and let the biryani rest, sealed, for 10 minutes. Carefully remove lid, and using a wide fork gently fluff and mix some rice from top into the lamb layers to distribute meat and rice while keeping some distinct layers intact.

Serve

    Spoon the lamb biryani onto a serving platter, garnishing with the reserved fried onions and extra chopped cilantro. Serve hot with cooling raita (yogurt cucumber), lemon wedges, and a simple salad.
