Okra (Bhindi)

    Prepare and dry

    Wash the okra under running water and pat dry thoroughly with kitchen towels. Trim the tops and bottoms and slice into 1-inch pieces. Thorough drying prevents sliminess while cooking.

    Optional anti-sliminess step

    If using cornstarch or besan, sprinkle 1 tbs over the cut okra with 1 tsp salt; toss gently to coat evenly and let sit 10 minutes. This helps absorb moisture and reduce slime.

    Pan-fry okra

    Heat 2 tbs mustard oil (or vegetable oil) in a large skillet or kadai over medium-high heat until shimmering. Add the okra in a single layer (work in batches if needed) and spread out so they don’t steam. Let the okra sear, stirring only occasionally, for about 8–10 minutes until lightly browned and slightly crisp. Season with 1 tsp salt while cooking. Remove the okra to a plate and set aside.

Kadai Masala (dry roast & grind)

    In a small dry skillet over low-medium heat, add 2 tbs coriander seeds, 1 tsp cumin seeds, 1 tsp fennel seeds (if using), 2 dried red chilies, 6 peppercorns and 2 cloves. Toast, stirring constantly, for 2–4 minutes until aromatic and the coriander turns slightly darker. Be careful not to burn the spices. Remove from heat and let cool 5 minutes, then grind to a coarse powder using a spice grinder or mortar and pestle. Set aside 2 tsp for the dish and store any remainder for other uses.

Masala & final assembly

    In the same kadai or a clean large skillet, heat 2 tbs oil over medium heat. Add 1 tsp cumin seeds and 1 pinch hing; let the cumin sizzle for 10–15 seconds.

    Add 1 cup finely chopped onion and 2 slit green chilies. Sauté, stirring often, for 6–8 minutes until the onion is soft and turning golden.

    Stir in 1 tsp ginger-garlic paste and cook 1 minute until the raw smell dissipates.

    Add 1 cup chopped or pureed tomato, 1 tsp turmeric powder, 1 tsp red chili powder (and 1 tsp Kashmiri chili if using). Cook, stirring frequently, for 6–8 minutes until the tomato breaks down and the oil begins to separate from the masala.

    Add 2 tsp freshly ground kadai masala and 1 tsp garam masala (optional). Stir well and cook 1–2 minutes to bloom the spices.

    Return the pan-fried okra to the kadai. Toss gently to coat the okra in masala. Reduce heat to low, cover and cook for 3–4 minutes to allow flavors to meld, stirring once or twice to avoid sticking. If mixture looks dry, add 1–2 tbs water but avoid moisture that makes okra slimy.

    Taste and adjust salt. Sprinkle chopped coriander leaves and 1 tsp lemon juice. Give a final gentle toss and remove from heat.

    Serve immediately with roti, paratha or steamed rice. The kadai masala should cling to slightly crisp okra pieces for the best texture.
