Trim and marinate
Trim excess fat from the goat pieces and pat dry. In a large bowl combine yogurt, lemon juice, salt (1.5 tsp), ginger paste and garlic paste. Add the goat pieces and toss thoroughly to coat. Cover and refrigerate for at least 2 hours and up to overnight for best flavor.

Prepare and blend
Lightly toast the cumin and coriander seeds in a dry skillet over medium heat until aromatic, about 30–45 seconds; let cool. Roughly chop cilantro stems, mint, green chilies, scallions, ginger and garlic. In a blender or food processor add the herbs, toasted seeds, black pepper, oil, salt (1 tsp) and a small splash (about 1–2 tsp) of water to help the blades. Pulse and blend until you have a coarse, bright-green paste. Scrape down sides and adjust seasoning or green chili to taste. Reserve 3/4 cup of this paste for cooking; keep extra for garnish if desired.

Sear the meat
Heat 1 tablespoon of oil or ghee in a heavy-bottomed Dutch oven or large skillet over medium-high heat. Remove excess marinade from goat pieces (shake off, but keep most of the yogurt). Working in batches if necessary, add the pieces and sear until browned on all sides, about 3–4 minutes per side. Transfer seared pieces to a plate and set aside.

Cook whole spices & onions
Reduce heat to medium. Add the remaining 2 tablespoons oil/ghee to the pot. Add bay leaves, crushed cardamom, cloves and cinnamon stick. Fry for 30–45 seconds until fragrant. Add chopped onion and a pinch of salt; cook, stirring, until onions are soft and golden brown, about 6–8 minutes.

Add tomatoes & ground spices
Stir in the chopped tomato and cook until they break down and oil begins to separate from the mixture, about 6 minutes. Add turmeric (1/2 tsp) and red chili powder (1/2 tsp) and sauté for 30 seconds.

Combine meat and green paste
Return the seared goat pieces with any accumulated juices to the pot. Add approximately 3/4 cup of the prepared hara masala (green paste). Stir to coat the meat well in the green paste and aromatics. Cook together for 2–3 minutes until the paste becomes fragrant.

Simmer to tenderness
Add 1 cup of water or low-sodium stock and bring to a gentle simmer. Reduce heat to low, cover partially with a tight-fitting lid (leave a small gap) and simmer gently until the goat is fork-tender, about 1 to 1 hour 15 minutes depending on cut and size. Check every 20 minutes, stirring, and add up to 1/2 cup more water if the curry is reducing too quickly. If you prefer using a pressure cooker, cook on medium for 20–25 minutes after pressure comes up, then release naturally and check for tenderness.

Finish with garam masala
When the goat is tender and sauce has thickened to your liking, stir in 1 teaspoon garam masala, taste for salt and adjust. If you want a fresher, greener finish, stir in an additional 2 tablespoons of the reserved fresh hara masala paste and let it cook for 1–2 minutes more (do not boil vigorously to preserve fresh herb color).

Turn off the heat. Sprinkle chopped cilantro and mint over the curry and gently mix. Transfer to a serving bowl, garnish with fried shallots or sliced green chilies if using, and serve with lemon wedges on the side.

Serve warm with steamed basmati rice, chapati, roti or naan. Leftovers refrigerate up to 3 days; flavors deepen overnight.
