    Prepare corn

    If using frozen corn, thaw completely and pat dry with paper towels to remove excess moisture. If using canned corn, drain well and pat dry.

    Make batter

    In a large bowl combine cornstarch, all-purpose flour, baking powder, salt, black pepper, garam masala, and red chili powder. Add cold water 1 tablespoon at a time and whisk to form a slightly thick batter that will coat corn kernels (about 2–3 tablespoons). Batter should cling to corn but not be runny.

    Coat corn

    Add the dried corn kernels to the batter and toss gently until each kernel is evenly coated. Let rest 3–5 minutes so the coating adheres.

    Shallow fry

    Heat vegetable oil in a wide skillet over medium-high heat until shimmering (about 350°F/175°C if using a thermometer). Add a single layer of coated corn (don't overcrowd) and cook, stirring occasionally, until golden and crisp on the outside, about 4–6 minutes. Use a slotted spoon to transfer cooked kernels to a paper towel–lined plate. Repeat with remaining corn. Alternatively, deep fry in 350°F oil in batches for 2–3 minutes until crisp.

    Season

    While hot, toss the fried corn lightly with 1/4 teaspoon additional salt and a pinch of chaat masala if desired to enhance flavor.

Tamarind-Mint Chat Sauce

    Combine tamarind paste, mint leaves, cilantro, green chili (if using), jaggery, salt, and 2 tablespoons water in a blender. Blend to a smooth, slightly thick sauce. Taste and adjust sweetness, salt, or lime juice. Stir in 1 tablespoon fresh lime juice. Transfer to a small bowl and refrigerate until needed.

Tamarind-Yogurt Drizzle

    Whisk together yogurt, tamarind paste, and salt until smooth. If too thick, thin with 1–2 teaspoons water. Chill until ready to assemble.

Assemble & Garnish

    Place warm crispy corn in a mixing bowl. Add diced red onion, diced tomato, chopped cilantro, and finely chopped green chili (if using). Toss gently to combine.

    Drizzle 2–3 tablespoons of the tamarind-mint chat sauce over the corn and toss gently so kernels are coated but still crisp. Add 2 tablespoons of the tamarind-yogurt drizzle and fold lightly.

    Transfer the corn chat to a serving platter or individual bowls. Sprinkle sev (or crushed papdi) over the top, followed by pomegranate arils if using. Finish with a light dusting of chaat masala, additional chopped cilantro, and lime wedges on the side.

    Serve immediately so the corn remains crisp. Leftover components (sauces) can be refrigerated separately for up to 2 days; reheating fried corn will soften it.
