Preheat and prepare pans

Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans (or line with parchment).

Combine dry ingredients

In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ground ginger until evenly distributed.

Mix wet ingredients

In a separate bowl, whisk the eggs, vegetable oil, vanilla extract, and buttermilk until combined.

Blend batter

Add the wet mixture to the dry ingredients and stir until just combined. Fold in the grated carrots, toasted walnuts, and optional raisins. Do not overmix.

Bake

Divide batter evenly between prepared pans and smooth the tops. Bake 28–34 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (baking time may vary by pan). Rotate pans halfway through baking for even browning.

Cool

Let cakes cool in pans for 10 minutes, then run a knife around the edges and invert onto wire racks to cool completely before assembling (about 1–1.5 hours).

Roasted Pineapple Chutney

Preheat broiler (or oven to 425°F/220°C). Spread pineapple chunks on a rimmed baking sheet in a single layer. Dot with butter and sprinkle the brown sugar evenly over the pineapple.

Roast the pineapple under the broiler (or in the hot oven) 8–12 minutes, tossing once, until edges are caramelized and juices are bubbling. Watch carefully to avoid burning.

Transfer roasted pineapple and any pan juices to a medium skillet. Add apple cider vinegar, ground ginger, cinnamon, crushed red pepper flakes, and salt. Simmer over medium-low heat 6–8 minutes to reduce and meld flavors, stirring occasionally. Remove from heat and stir in fresh lime juice. Taste and adjust salt or acidity as needed. Cool to room temperature before using; chutney will thicken as it cools.

Cream Cheese Glaze

In a mixing bowl, beat softened cream cheese and softened butter with a mixer on medium speed until smooth and free of lumps (about 1–2 minutes).

Sift the confectioners' sugar into the bowl and add vanilla and salt. Beat on low to incorporate, then increase speed to medium until smooth. If glaze is too thick for drizzling, add heavy cream 1 teaspoon at a time (up to 1 tablespoon) until you reach a pourable but thick glaze consistency that will coat a spoon.

Taste and adjust sweetness or salt as desired. Keep chilled until ready to glaze; bring to cool-room temperature briefly before pouring if very firm.

Fresh Whipped Cream

Chill a mixing bowl and whisk or beaters for 10 minutes in the freezer for best volume. Pour the cold heavy cream into the chilled bowl, add confectioners' sugar and vanilla. Whip on medium-high speed until soft peaks form, about 2–3 minutes. Do not overwhip; stop when peaks hold but are still glossy. Keep chilled until assembly.

Assembly & Finishing

If cake layers are domed, level the tops with a serrated knife so they stack evenly. Place one cake layer on a serving plate or cake stand.

Spread 2–3 tablespoons of cream cheese glaze over the first layer to act as a thin crumb coat, then spoon 3–4 tablespoons of roasted pineapple chutney (strained of excess liquid if very loose) in the center and spread gently, leaving a small border.

Place the second cake layer on top. Pour remaining cream cheese glaze over the top, letting it drip slightly over the edges. Use an offset spatula to smooth the top; you can leave the sides lightly glazed (naked-style) or fully cover if desired.

Spoon small dollops of fresh whipped cream around the perimeter or pipe rosettes. Spoon a small amount of roasted pineapple chutney atop a few whipped cream rosettes. Sprinkle extra toasted walnuts and a little grated carrot or microgreens for color and texture.

Refrigerate the assembled cake 30 minutes to set glaze before serving. Bring to room temperature 15–20 minutes before slicing for best flavor and texture.
