Preheat and prepare

Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or lightly oil it so vegetables don't stick.

Prepare firmer vegetables

Place the halved baby potatoes and carrot sticks in a large mixing bowl. Drizzle with 2 tablespoons olive oil, half the chopped rosemary, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Toss to coat well.

Roast firmer vegetables first

Spread the potatoes and carrots in a single layer on one side of the baking sheet (leave room). Roast in the oven for 15 minutes to give firmer vegetables a head start.

Add remaining vegetables

While potatoes and carrots roast, add broccoli florets, red bell pepper pieces, and red onion wedges to the mixing bowl. Add remaining 2 tablespoons olive oil, sliced garlic, remaining rosemary, dried thyme, and remaining 1 tsp kosher salt. Toss gently to coat. After the initial 15 minutes, remove baking sheet, add the mixed vegetables in a single layer alongside the par-roasted potatoes and carrots, keeping everything fairly flat so it browns instead of steams.

Finish roasting

Return sheet to the oven and roast another 12–18 minutes, stirring once halfway through, until vegetables are tender and edges are caramelized. If some pieces are larger, rotate them to ensure even browning. Total roasting time should be about 27–33 minutes depending on vegetable size and oven.

Final seasoning

When vegetables are tender and golden, remove from oven. Taste and adjust seasoning with extra salt and pepper if needed. Let rest 3–5 minutes before dressing.

Lemon-Herb Vinaigrette

While vegetables roast, whisk together lemon juice, 2 tablespoons extra-virgin olive oil, Dijon mustard, and honey or maple syrup in a small bowl until emulsified.

Stir in the chopped parsley and season with 1/4 tsp salt and 1/4 tsp black pepper. Taste and adjust acidity or sweetness to preference.

Assembly & Serving

Transfer roasted vegetables to a large serving platter or bowl while still warm.

Drizzle the lemon-herb vinaigrette evenly over the vegetables and toss gently to coat. Taste and add additional salt, pepper, or lemon juice if desired.

Sprinkle optional crumbled feta or goat cheese and toasted nuts over the top, then finish with a light dusting of fresh lemon zest for brightness.
