Dumpling Dough

In a large mixing bowl, combine 3 cups all-purpose flour and 1 tsp salt. Mix briefly to distribute the salt.

Make a well in the center and gradually pour 1 cup warm water while stirring with chopsticks or a fork to form shaggy dough.

When dough begins to come together, add 1 tablespoon vegetable oil and knead on a lightly floured surface for 8–10 minutes until smooth and elastic. Dough should be soft but not sticky. Add a few drops of water or a teaspoon of flour if needed.

Cover the dough with a damp cloth or plastic wrap and rest at room temperature for 30 minutes. This relaxes the gluten and makes rolling easier.

After resting, divide dough into two portions. Roll each into a log and cut into 15–18 equal pieces for a total of 30–36 dumplings. Keep pieces covered to prevent drying.

On a lightly floured surface, take one piece and flatten with your palm. Using a rolling pin, roll into a thin round wrapper about 3.5–4 inches (9–10 cm) diameter. Aim for slightly thinner edges and a slightly thicker center so filling is supported. Repeat for remaining pieces, dusting with flour/cornstarch to prevent sticking.

Pork & Shrimp Filling

Prepare ingredients: finely chop shrimp and, if using, rehydrated shiitake mushrooms. Finely slice green onions. Grate ginger and mince garlic.

In a large bowl, combine 1 lb ground pork and 8 oz finely chopped shrimp. Add 4 sliced green onions, 1 tbsp grated ginger, 2 minced garlic cloves, and chopped mushrooms if using.

Add seasonings: 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp rice wine, 1 tsp sesame oil, 1 tsp sugar, 1 tsp white pepper, and 2 tsp cornstarch.

Beat 1 large egg and add to the mixture along with 2 tablespoons water and 1 tsp vegetable oil (this helps the filling stay juicy and emulsified).

Mix the filling vigorously in one direction (or use a stand mixer with paddle) for 2–3 minutes until mixture becomes sticky and slightly tacky — this develops a binding protein that keeps the filling cohesive when cooked.

Cover and refrigerate the filling for 20–30 minutes to allow flavors to meld and the cornstarch to hydrate. Keep chilled until ready to assemble.

Assembly & Steaming

Prepare steamer: fill the steamer pot or wok with water (about 1 liter / 1000 ml) and bring to a simmer. Line bamboo steamer baskets or metal steamer trays with lettuce leaves or parchment circles. Lightly brush liners with a little vegetable oil to prevent sticking.

Spoon about 1 heaping teaspoon (or about 15–18 g) of filling into the center of each wrapper. Do not overfill — overfilling makes sealing difficult and causes leaks.

To seal: wet the edge of the wrapper with a little water using your fingertip. Fold wrapper in half and press edges to seal, or pleat edges into a traditional dumpling shape using 6–8 small folds. Make sure edges are tightly sealed and no air is trapped.

Place each dumpling seam-side up (or down depending on preference) in the prepared steamer, leaving about 1 inch (2 cm) between dumplings to allow expansion. Brush tops lightly with a mixture of 1 tablespoon vegetable oil and 1 teaspoon sesame oil to keep them glossy (optional).

When steamer water is simmering, set the basket over the steam, cover and steam for 8–10 minutes for filled dumplings with pork and shrimp. Ensure steam stays consistent; do not lift the lid during the first 7 minutes.

Check doneness: pork should reach an internal temperature of 160°F (71°C) and shrimp should be opaque. If using larger dumplings, add 1–2 minutes.

Remove dumplings carefully with tongs or a spatula to a platter. Serve immediately with dipping sauce.

Dipping Sauce

In a small bowl combine 3 tablespoons soy sauce, 2 tablespoons black vinegar (or rice vinegar), 1 teaspoon sesame oil, 1 teaspoon chili oil (or sliced fresh chili), and 1 teaspoon sugar if you prefer a touch of sweetness.

Stir until sugar dissolves and garnish with 1 tablespoon chopped cilantro if desired. Taste and adjust: add more vinegar for tang, more soy for saltiness, or more chili for heat.

Make-Ahead & Storage

To freeze: arrange assembled but unsteamed dumplings on a tray lined with parchment so they don't touch and freeze until solid (1–2 hours). Transfer to a zip-top bag and freeze up to 1 month. Steam from frozen, adding 2–3 minutes to cooking time.

Leftovers: store cooked dumplings in an airtight container in the refrigerator up to 2 days. Reheat by steaming for 3–4 minutes or pan-frying with a splash of water and a lid (potsticker-style) until heated through and bottoms crisp.
