Cook rice (if not using leftover chilled rice)

Rinse 1 cup uncooked jasmine rice under cold water until water runs clear. Combine with 1.5 cups water in a pot, bring to a boil, reduce to low, cover and simmer 12–15 minutes until water is absorbed. Remove from heat and let stand, covered, 10 minutes. Spread on a tray and chill (cold, day-old rice works best). Measure 4 cups cooked chilled rice for the recipe.

Break up any large clumps of chilled rice with your hands or a fork so grains are separated before frying.

Aromatics & aromatics oil

Heat a large wok or heavy skillet over high heat until very hot. Add 1 tbs vegetable oil and 1 tbs neutral oil (from the Rice & liquids section) and swirl to coat.

Add the beaten eggs and quickly scramble them, stirring constantly until just set. Transfer the scrambled eggs to a plate and set aside.

Add the remaining 1 tbs neutral oil and 1 tbs butter to the hot wok. Add the diced onion and the white parts of the sliced green onions. Stir-fry 1–2 minutes until the onion is translucent.

Add the minced garlic and stir-fry quickly for 15–30 seconds until fragrant, taking care not to burn it.

Vegetables & protein

Add the thawed peas and carrots and the optional cooked protein (chicken, shrimp or ham). Stir-fry 1–2 minutes to heat through and incorporate with the aromatics.

Push the vegetables and protein to one side of the wok to create space for the rice.

Rice & combine

Add the chilled rice to the cleared side of the wok. Drizzle the sesame oil over the rice. Use a spatula to spread and press the rice against the hot surface; allow it to sit for 20–30 seconds to get a little toasty, then toss and break up any remaining clumps. Mix rice with the vegetables and proteins.

Seasonings & sauce

Pour the light soy sauce, dark soy sauce (if using), and oyster sauce over the rice. Stir and toss continuously to distribute sauces evenly and coat the rice. Taste and add white pepper and salt as needed.

Add the reserved scrambled eggs back into the wok and fold them through the rice until evenly distributed.

Stir in the green parts of the sliced green onions. Turn off the heat and finish with a quick drizzle of sesame oil for aroma.

Transfer the fried rice to a serving dish and serve immediately.
