Method

Main Ingredients

1

Preheat and prepare

Preheat your oven to 350°F (175°C). Lightly grease and flour a 9-inch round cake pan or line the bottom with parchment paper.

2

Combine dry ingredients

In a large mixing bowl, whisk together 2 cups all-purpose flour, 1/2 cup granulated sugar, 2 tsp baking powder, and 1/2 tsp fine salt until evenly combined.

3

Mix wet ingredients

In a separate bowl, beat 2 large eggs lightly, then whisk in 1 cup whole milk, 1/4 cup melted unsalted butter (cooled slightly), and 1 tsp vanilla extract until smooth.

4

Combine wet and dry

Make a well in the center of the dry ingredients. Pour the wet mixture into the well and stir with a spatula or wooden spoon until just combined and no large streaks of flour remain. Do not overmix; a few small lumps are fine.

5

Bake

Pour the batter into the prepared pan and smooth the top. Bake in the preheated oven for 25–30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.

6

Cool

Remove the cake from the oven and let it cool in the pan on a wire rack for 10 minutes. Run a knife around the edge, then invert onto the rack (or lift out using parchment) and let cool completely before finishing.

Optional Finish / Serving

7

Finish and serve

When the cake is completely cool, dust the top with 2 tablespoons powdered sugar. Arrange fresh berries on top or alongside (about 1 cup). Serve slices with maple syrup (1/4 cup) on the side for drizzling. Store leftovers covered at room temperature for up to 2 days.
