Toast the roll cut-side down in the skillet 2–3 minutes until golden and slightly crisp. Remove and keep warm.
Meat & Cheese

Select one meat (turkey, ham, or roast beef) totaling about 4 oz. If you prefer it warmed, add the meat to the hot skillet for 30–60 seconds per side just to take the chill off and to develop slight browning.

If using cheese, place 2 slices on top of the warm meat on the bottom half of the roll so the residual heat slightly melts it (30–60 seconds).
Toppings

Choose two toppings from the list. Arrange them evenly over the cheese/meat: shredded lettuce, tomato slices, thin red onion rings, pickle slices, or banana peppers.

Season tomato and lettuce lightly with a pinch of salt and a crack of black pepper if using.
Sauce & Assembly

Choose one sauce. Spread mayonnaise or aioli on the top half of the toasted roll; brush mustard or vinaigrette thinly if those are chosen. Use about 1 tbs mayo/aioli or 1 tsp mustard/1 tbs vinaigrette.

Close the sandwich, press gently, and slice in half if desired. Serve immediately while roll is still slightly warm.
