Topping

1

Melt butter and dissolve sugars

Place a medium saucepan over medium heat and add the unsalted butter. Once melted, add the light brown sugar and granulated sugar. Stir constantly with a heatproof spatula or wooden spoon until the sugars dissolve and mixture begins to bubble gently, about 2–3 minutes.

2

Bring to a light simmer

Allow the mixture to come to a light simmer, continuing to stir so it doesn't scorch. Let it simmer gently for 1–2 minutes until the sugar is fully incorporated and the mixture is slightly thickened.

3

Add cream, vanilla, and salt

Remove the pan from heat and carefully stir in the heavy cream, vanilla extract, and salt. The mixture will bubble up; stir until smooth and glossy.

4

Fold in nuts (optional)

If using chopped pecans or walnuts, stir them into the warm topping until evenly distributed.

5

Cool slightly and finish

Let the topping cool for 5–10 minutes so it thickens to a spreadable consistency. If desired, sprinkle with sea salt flakes just before serving to enhance flavor.
