    Prepare oven and dough

    Preheat your oven to 500°F (260°C) with a pizza stone or inverted baking sheet inside for at least 30 minutes. If using a home oven that won't reach 500°F, preheat to the highest temperature possible. Lightly flour or dust a pizza peel or baking sheet with the cornmeal or flour.

    Prepare sauce

    In a small bowl, combine plum tomato sauce, tomato paste, olive oil, minced garlic, dried oregano, dried basil, salt, and black pepper. Stir until smooth and well combined. Taste and adjust seasoning. The sauce should be slightly thick so it won't make the crust soggy.

    Shape dough

    On a lightly floured surface, stretch or roll the pizza dough to a 12–14 inch round (or desired size). Transfer the stretched dough to the prepared pizza peel or baking sheet dusted with cornmeal. Use your fingers to create a slightly raised rim.

    Evenly spread the prepared plum tomato sauce over the dough, leaving a 1/2-inch border. Sprinkle shredded mozzarella evenly over the sauced surface, then scatter the grated Parmesan on top for flavor layering.

Meats

    Distribute the pepperoni slices evenly over the cheese. Break or slice the cooked Graziano Italian sausage into bite-sized pieces and scatter them across the pizza. If your sausage is raw, brown and cook thoroughly in a skillet first, drain excess fat, then add to the pizza.

Vegetables & Olives

    Scatter the sliced mushrooms, thinly sliced red onion, and green bell pepper evenly over the meats. Finish by distributing the sliced black olives across the top. Avoid piling toppings too thickly so the pizza cooks evenly.

    If using larger, watery mushrooms or very wet vegetables, pat them dry with paper towels before placing them on the pizza to prevent sogginess.

Finishing

    Lightly sprinkle red pepper flakes over the assembled pizza if you want heat. Slide the pizza onto the preheated pizza stone or baking sheet.

    Bake for 8–12 minutes, rotating halfway through, until the crust is golden and blistered and the cheese is melted and bubbling. Baking time will vary by oven and temperature.

    Remove the pizza from the oven. Let rest for 2–3 minutes to set. Garnish with fresh basil leaves if desired, slice, and serve hot.
