Prepare vegetables

Rinse the salad greens under cold water and spin or pat dry. Rinse cherry tomatoes and halve them. Peel or scrub the cucumber, then slice into half-moons about 1/8–1/4 inch thick (use about 1/4 of a medium cucumber). Thinly slice a few rings of red onion until you have about 1 tablespoon. If using whole carrot, peel and grate or use pre-shredded to measure 2 tablespoons.

Assemble salad

Place 3 cups of mixed greens in a medium bowl. Scatter the halved cherry tomatoes, cucumber slices, sliced red onion, and shredded carrot over the greens. Sprinkle the crumbled feta or shaved parmesan and toasted seeds or nuts if using.

In a small bowl, jar, or container with a lid combine 2 tablespoons olive oil, 1 tablespoon red wine vinegar (or lemon juice), 1/2 teaspoon Dijon mustard, 1/2 teaspoon honey, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Whisk briskly or shake the jar until the dressing is emulsified and slightly thickened. Taste and adjust seasoning (add a pinch more salt or a squeeze more lemon if desired).

Drizzle about 1–2 tablespoons of vinaigrette over the assembled salad and toss gently to coat. Serve the remaining vinaigrette on the side if desired.

Fill a 12-16 oz glass with 4 ice cubes. Pour 12 oz of chilled soda into the glass. Garnish with a lemon or lime wedge on the rim or squeezed into the drink if desired. Serve immediately.
