Combine spirits
In a mixing glass filled about two-thirds with ice (approximately the 1 cup of ice listed), add 2 oz gin and 0.5 oz Dolin Dry Vermouth.
Stir and dilute
Stir the mixture with a bar spoon for 20–30 seconds (about 20–30 good turns) until well chilled and slightly diluted. Aim for a properly chilled, silky texture rather than aeration.
Prepare garnish
While stirring, use a vegetable peeler or small paring knife to cut a 1-inch wide lemon peel (about 1 twist). Express the oils over the chilled glass by holding the peel over the glass and giving it a quick snap so the oils spray onto the surface. Rub the peel around the rim if desired.
Strain and serve
Discard the ice or water from the chilled serving glass. Using a julep or hawthorne strainer, strain the stirred cocktail into the chilled glass.
Garnish
Skewer 2 pitted green olives on a cocktail pick and rest across the rim or drop into the drink. Finish by placing the expressed lemon twist on the rim or floating on the surface.
Final check
Serve immediately while cold. Taste and, if desired, adjust next time by increasing vermouth by 0.25 oz for a softer profile or reducing for a drier finish.
