Chill glass

Place a highball or Collins glass in the freezer for 5 minutes or fill it with ice water while you prepare the cocktail to chill it.

If using fresh pineapple, strain pulp from 4 oz fresh pineapple juice through a fine mesh to obtain a smooth juice. Measure juices and set aside.

Build the cocktail

Fill a shaker halfway with ice.

Add 4 oz pineapple juice, 0.75 oz fresh lime juice, 0.5 oz agave syrup, and 1.5 oz tequila alternative to the shaker.

Shake vigorously for 10–12 seconds until well chilled and slightly frothy.

Discard the chilling ice or water from the glass and fill the glass with fresh ice (large cubes or a block if available).

Double‑strain the shaken mixture into the prepared glass to remove small ice shards and any pulp.

Top with 1 oz club soda to add brightness and a touch of effervescence. Gently stir once with a bar spoon to incorporate.

Garnish & Finish

Express the oils from a lime wheel over the drink by holding the wheel skin‑side down and giving it a quick squeeze over the surface. Rub the rim of the glass with the wheel if desired.

Garnish with the lime wheel on the rim and optionally a small pineapple chunk or leaf on a pick. Serve immediately.
