Method

Preparation of Smoked Chile Sauce

  1. 1

    Soak the Chiles

In a bowl, soak the dried ancho and guajillo chiles in hot water for about 20 minutes until softened.

  2. 2

    Blend the Sauce

Remove the stems and seeds from the soaked chiles. In a blender, combine the chiles, garlic cloves, vegetable broth, and lime juice. Blend until smooth.

Cooking the Chicken Chorizo

  1. 3

    Cook the Chicken

In a skillet, heat the olive oil over medium heat. Add the ground chicken and cook until browned, about 5-7 minutes.

  2. 4

    Add Spices

Stir in the smoked paprika, cumin, garlic powder, onion powder, red pepper flakes, salt, and black pepper. Cook for an additional 2-3 minutes.

  3. 5

    Add the Smoked Chile Sauce

Pour the blended smoked chile sauce over the chicken mixture. Stir to combine and simmer for 10 minutes.

Assembling the Sloppy Jose

  1. 6

    Warm the Tortillas

In a separate skillet, warm the corn tortillas on medium heat for about 1-2 minutes on each side until pliable.

  2. 7

    Fill and Assemble

Place a generous scoop of the chicken chorizo mixture onto each tortilla. Top with queso fresco, pickled red onion, sliced avocado, and fresh cilantro.
