Method

Patty Preparation

  1. 1

    Prepare the Beef Mixture

In a bowl, combine the ground beef, salt, and black pepper. Mix gently to combine without overworking the meat.

  2. 2

    Form the Beef Balls

Divide the mixture into 4 equal portions, each weighing approximately 3 oz. Roll them into balls.

Cooking the Patty

  1. 3

    Heat the Cooking Surface

Preheat a cast-iron skillet or griddle over medium-high heat until hot.

  2. 4

    Smash the Patties

Place the beef balls onto the hot skillet. Using a heavy spatula, smash each ball down into a patty about 1/2 inch thick.

  3. 5

    Cook the Patties

Cook for about 2-3 minutes until the edges are browned and the juices start to bubble out.

  4. 6

    Melt the Cheese

Flip the patties and immediately place a slice of cheddar cheese on top of each one. Cook for an additional 1-2 minutes until the cheese has melted.

Assembling the Burger

  1. 7

    Toast the Buns

Toast the brioche buns on the skillet for 1-2 minutes until golden brown.

  2. 8

    Add the Patty

Place a cheesy smashed patty on the bottom half of each toasted bun.

  3. 9

    Add Pickles

Top each patty with a generous portion of pickles.

  4. 10

    Finish Assembling

Cover with the top half of the bun to complete the burger.
