Chicken Preparation

Marinate the Chicken
In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, salt, black pepper, and chili powder. Stir to combine.

Add Chicken
Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cook the Chicken
Preheat the oven to 400°F (200°C). Place the marinated chicken in a roasting pan and roast for 25-30 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (74°C).

Shred the Chicken
Once cooked, remove the chicken from the oven and let it cool slightly. Use two forks to shred the chicken into bite-sized pieces.

Warm the Tortillas
In a skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until soft and pliable.

Assemble the Tacos
Place a generous amount of the shredded chicken on each tortilla. Top with Chihuahua cheese.
