Pickle the Cherries
In a small saucepan, combine the pitted cherries, white vinegar, sugar, and salt. Bring to a simmer over medium heat and cook for 5 minutes. Remove from heat and let cool. Store in the refrigerator for at least 1 hour before using.

Assemble the Salad
In a large salad bowl, layer the baby Bibb lettuce and chopped heirloom tomatoes. Spoon the pickled cherries over the top, followed by the sunflower seeds. Tear the Ontario burrata into pieces and place on top.

Drizzle the prepared vinaigrette over the salad just before serving. Toss gently to combine and serve immediately.
