Preparing the Prime Rib

Roasting the Prime Rib
Preheat the oven to 220°C (425°F). Place the seasoned prime rib in a roasting pan and roast for about 20 minutes per 500g for medium-rare. Use a meat thermometer to check for an internal temperature of 55°C (130°F).
Preparing the Vegetables

Roasting Fingerling Potatoes
Toss the fingerling potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 30-35 minutes, or until golden and crispy.

Cooking Asparagus
In the last 10 minutes of cooking the potatoes, add the asparagus to the baking sheet. Drizzle with butter and season with salt and pepper, roasting until tender.
