Method

Crispy Tofu Preparation

    Prepare the Tofu

    Press the tofu to remove excess moisture, then cut it into bite-sized cubes. Toss the tofu cubes in cornstarch and salt until evenly coated.

    Fry the Tofu

    Heat vegetable oil in a frying pan over medium-high heat. Once hot, add the tofu cubes and fry until golden and crispy on all sides, about 10-15 minutes. Remove and drain on paper towels.

Zucchini Noodles Preparation

    Spiralize the Zucchini

    Using a spiralizer, create noodles from the zucchini. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.

    Sauté the Noodles

    In a separate pan, heat olive oil over medium heat. Add the zucchini noodles and a pinch of salt. Sauté for 2-3 minutes until just tender. Remove from heat.

Mint Dressing Preparation

    Blend the Dressing

    In a blender, combine fresh mint leaves, lemon juice, olive oil, honey or agave syrup, and salt. Blend until smooth and adjust seasoning to taste.

Charred Onion Preparation

    Char the Onion

    Slice the red onion thickly and toss it with olive oil and a sprinkle of salt. Grill or pan-sear over high heat until charred and softened, about 5-7 minutes. Set aside.

Serrano Chutney Preparation

    Prepare the Chutney

    In a blender, combine the serrano peppers, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning to taste.

Assembly

    Plate the Dish

    On a serving plate, arrange the sautéed zucchini noodles as a base. Top with crispy tofu, charred onion, and drizzle with mint dressing and coconut cream. Serve with serrano chutney on the side.
