Preparing the Chicken

    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and black pepper. Cook the chicken for 7-8 minutes on each side or until fully cooked and golden brown. Remove from skillet and keep warm.

    Sauté the Chanterelle Mushrooms

    In the same skillet, add butter and melt. Add sliced chanterelle mushrooms and cook for 5 minutes until tender. Remove and set aside.

Preparing the Brussels Sprouts

    Cook Brussels Sprouts

    Trim and shred the Brussels sprouts. In the same skillet, add a little more olive oil if needed, and sauté the shredded Brussels sprouts for about 5-7 minutes until they are bright green and tender. Season with salt and pepper.

Making Whipped Potatoes

    Prepare the Potatoes

    Peel and cube the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Whip the Potatoes

    Add heavy cream, butter, salt, and pepper to the drained potatoes. Use a potato masher or electric mixer to whip until smooth and creamy.

Plating

    Assemble the Dish

    On a plate, create a bed of whipped potatoes. Top with sautéed Brussels sprouts, followed by the chicken breast. Finally, spoon the chanterelle mushrooms on top and drizzle with any remaining juices from the skillet.
