Steak Preparation

    Season the Steak

    Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels. Rub both sides with olive oil, and season generously with salt and black pepper.

    Sear the Steak

    Heat a skillet (preferably cast iron) over medium-high heat. Once hot, place the steaks in the skillet and sear for about 4-5 minutes on one side without moving them.

    Add Flavor

    Flip the steaks and add butter and rosemary to the skillet. Spoon the melted butter over the steaks as they cook for another 3-4 minutes, depending on your desired level of doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing.

    Boil the Potatoes

    Peel and cut the potatoes into quarters. Place them in a pot of salted cold water and bring to a boil. Add the garlic cloves to the pot. Cook until the potatoes are fork-tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and garlic, then return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy, adjusting the milk to your desired consistency.
