Method
Prepare the Prime Ribeye

Season the Steak
Pat the prime ribeye steak dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Once hot, add the ribeye steak and sear for 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from skillet and let rest for 5-10 minutes before slicing.
Make the Potato Purée

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter and heavy cream. Mash until smooth and creamy. Season with additional salt to taste.
Sauté the Spinach

Cook Spinach
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt. Remove from heat.
Prepare the Black Pepper Sauce

Finish the Sauce
Stir in heavy cream and season with salt. Cook for an additional 2-3 minutes until slightly thickened.
