Crab Balls Preparation

Cook the Black Rice
Rinse 1 cup of black rice under cold water. In a medium saucepan, combine the rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 30-35 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 10 minutes before fluffing with a fork.

Combine Ingredients
In a large mixing bowl, combine the cooked black rice, 1 cup of crab meat, 1 tablespoon of Old Bay seasoning, 2 tablespoons of chopped green onions, and 1 beaten egg. Mix until all ingredients are well incorporated.

Form the Balls
Using your hands, take a small amount of the mixture and form it into balls about the size of a golf ball. Roll each ball in breadcrumbs to coat evenly.

Cook the Crab Balls
Heat a large skillet over medium heat and add a few tablespoons of oil. Once hot, add the crab balls in batches, being careful not to overcrowd. Cook for about 4-5 minutes on each side, or until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

Mix the Old Bay Crème
In a small bowl, combine 1 cup of sour cream, 1 cup of mayonnaise, 1 teaspoon of Old Bay seasoning, 1 tablespoon of lemon juice, and 1/2 teaspoon of garlic powder. Whisk together until smooth and well blended. Adjust seasoning to taste.
