Halibut Fillet

    Prepare the Halibut

    Preheat the grill or a skillet over medium-high heat. Season the halibut fillets with olive oil, lemon juice, salt, and black pepper. Allow them to marinate for 10 minutes.

    Cook the Halibut

    Place the seasoned halibut fillets on the grill or skillet. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from heat and set aside.

Smoked Corn Puree

    Prepare the Corn

    In a saucepan, melt butter over medium heat. Add the fresh corn kernels and sauté for about 3-4 minutes until slightly tender.

    Blend the Puree

    Add heavy cream, smoked paprika, and salt to the corn. Blend in a food processor until smooth and creamy. Heat gently before serving.

Charred Corn Salad

    Char the Corn

    In a skillet, heat olive oil over medium-high heat. Add the fresh corn kernels and char for about 5-7 minutes until they develop a golden-brown color.

    Combine Salad Ingredients

    In a bowl, combine the charred corn, diced red bell pepper, diced red onion, chopped cilantro, lime juice, salt, and black pepper. Toss to mix well.

Garnish

    Plate the Dish

    On a plate, spread a layer of smoked corn puree. Place the halibut fillet on top, followed by a generous scoop of charred corn salad. Garnish with fennel fronds and micro greens.
