Marinating the Chicken

Prepare the Marinade
In a small bowl, mix together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined.

Marinate the Chicken
Place the chicken breasts in a zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F/200°C).

Grill the Chicken
Remove the chicken from the marinade and let any excess drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink inside.

Toss the Vegetables
In a large bowl, combine the sliced zucchini, chopped bell pepper, and sliced carrots. Drizzle with olive oil, and season with salt and black pepper. Toss to coat the vegetables evenly.

Place the seasoned vegetables on the grill alongside the chicken, cooking them for about 4-5 minutes, turning occasionally until tender and slightly charred.

Once the chicken and vegetables are cooked, remove them from the grill. Let the chicken rest for a few minutes before slicing. Serve the grilled chicken alongside the seasonal vegetables.
