Preparing the Calamari

Clean the Calamari
Rinse the fresh calamari under cold water, then remove the head and innards. Cut the body into rings.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Dredge the Calamari
Dip the calamari rings first in the egg mixture, allowing the excess to drip off, then coat them in the flour mixture. Ensure they are evenly coated.
Frying the Calamari

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully drop the coated calamari rings into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil.
Making the Marinara Sauce

Sauté the Garlic
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté for about 1 minute until fragrant.

Combine Ingredients
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar to the saucepan. Stir well.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Plate the Calamari
Serve the crispy calamari hot with a side of marinara sauce for dipping.
