Chop the Vegetables

Wash and chop the carrots, zucchini, bell peppers, eggplant, and onion into bite-sized pieces. Mince the garlic.

Prepare the Spices

In a small bowl, mix together the ground cumin, ground coriander, ground cinnamon, paprika, turmeric, salt, and black pepper.

Sauté the Onions and Garlic

In a large pot or tagine, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent. Add the minced garlic and sauté for another minute until fragrant.

Add the Vegetables

Stir in the chopped carrots, zucchini, bell peppers, and eggplant. Cook for about 7-10 minutes, stirring occasionally until the vegetables begin to soften.

Add Spices and Tomatoes

Sprinkle the spice mixture over the vegetables and stir well. Add the diced tomatoes and vegetable broth. Bring to a boil.

Simmer

Reduce the heat to low, cover, and let the tagine simmer for 30-40 minutes, stirring occasionally. The vegetables should be tender but not mushy.

Finish with Cilantro

Once cooked, stir in the chopped cilantro for freshness before serving.
