Preparation
Prepare the Noodles
Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.
Make the Sauce
In a small bowl, whisk together fish sauce, soy sauce, tamarind paste, brown sugar, and lime juice until well combined. Set aside.
Cooking
Cook the Tofu
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced tofu and cook until golden brown on all sides. Remove and set aside.
Cook the Shrimp
In the same skillet, add another tablespoon of vegetable oil. Add the shrimp and cook until they turn pink and are cooked through, about 2-3 minutes. Remove and set aside with the tofu.
Stir-fry Vegetables
Add the green onions, carrot, and bean sprouts to the skillet. Stir-fry for about 2-3 minutes until vegetables are tender but still crisp.
Combine Everything
Add the soaked noodles, cooked tofu, and shrimp back into the skillet with the vegetables. Pour the sauce over the mixture and toss everything together until well coated and heated through, about 2-3 minutes.
Serving
Plate the Dish
Serve the Pad Thai hot, garnished with crushed peanuts, fresh cilantro, and lime wedges on the side.
