Falafel Preparation

Soak Chickpeas

Rinse the dried chickpeas and soak them in water overnight (at least 8 hours) to soften.

Make Falafel Mixture

In a food processor, combine soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, black pepper, and flour. Pulse until a coarse paste forms, scraping down the sides as needed.

Shape Falafel

Using your hands, shape the mixture into small balls or patties, about 1.5 inches in diameter.

Fry Falafel

Heat oil in a deep frying pan over medium heat. Fry the falafel in batches, about 4-5 at a time, until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Mix Tahini Sauce

In a small bowl, whisk together tahini, lemon juice, minced garlic, water, and salt until smooth. Adjust consistency with more water if needed.

Salad Preparation

Prepare Salad

In a large bowl, combine chopped cucumber, tomato, and red onion. Drizzle with olive oil and lemon juice, then season with salt and black pepper. Toss gently to combine.
