Marinade Preparation
Prepare the Marinade
In a bowl, combine soy sauce, lime juice, ground coriander, ground cumin, minced garlic, brown sugar, salt, and black pepper. Mix well.
Marinate the Chicken
Cut the chicken breast into strips or cubes, then add to the marinade. Ensure the chicken is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Peanut Sauce Preparation
Make the Peanut Sauce
In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, and red pepper flakes. Stir until smooth and heated through, about 5 minutes. If the sauce is too thick, add a bit of water to reach desired consistency.
Grilling the Chicken
Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Assemble the Skewers
Thread the marinated chicken pieces onto the skewers. Leave a little space between each piece for even cooking.
Serving
Serve the Chicken Satay
Remove the skewers from the grill. Serve hot with the warm peanut sauce for dipping.
