Prepare glass and optional rinse

Optional smoky rinse
If you want an extra smoky aroma, pour 0.25 oz Laphroaig into the serving glass, swirl to coat the interior, then discard any excess (or leave it in for more smoke). This gives a smoky perfume without overpowering the drink.

Fill a large wine glass or rocks glass with ice to chill while you build the cocktail.
Build the cocktail

In a mixing glass or shaker filled with fresh ice, combine 1.5 oz Laphroaig, 0.75 oz Aperol, 0.5 oz fresh lemon juice and 0.25 oz simple syrup.

Stir gently for 10–15 seconds (or give a brief shake if you prefer a slightly brighter texture) to chill and lightly dilute the mixture.
Finish and serve

Dump the ice from the chilled serving glass (if you used an ice-filled glass to chill) and add fresh ice to the glass.

Strain the stirred mixture into the prepared glass over fresh ice.

Top with 2 oz dry sparkling wine and 1 oz soda water. Gently stir once or twice to combine—avoid over-stirring so you don't lose carbonation.

Garnish with an orange wheel or a long orange twist. Express the orange oils over the top of the drink by pinching the peel, then drop the twist or wheel into the glass.

Taste and adjust: if you want it slightly sweeter, add up to 0.25 oz more simple syrup; if you want more smoke aroma, leave the optional rinse in the glass or add a brief 0.25 oz float of Laphroaig on top.
