Cocktail

1. Chill glass

Place a martini or coupe glass in the freezer or fill with ice water to chill while you prepare the cocktail.

2. Combine ingredients

In a cocktail shaker, add the vodka, pistachio liqueur (or orgeat plus pistachio paste), dry vermouth, simple syrup, fresh lemon juice, and egg white (if using).

3. Dry shake

Seal the shaker and shake vigorously for 15–20 seconds without ice to emulsify the egg white and create a silky texture and froth.

4. Wet shake

Open the shaker, add the ice cubes, reseal, and shake vigorously for another 15–20 seconds until well chilled and slightly diluted.

5. Strain

Discard the ice/water from the chilled glass if used. Double-strain the cocktail into the chilled martini or coupe using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any pistachio solids.

Garnish & Serve

6. Sprinkle the finely chopped shelled pistachios lightly over the foam or the surface of the cocktail. If using, dust with a little pistachio powder or a hint of lemon zest for aroma. Serve immediately.
